Salmon marinade for 3 lbs. salmon filet:
4 TBS fish sauce 
3 TBS oyster sauce 
3 tsp honey
1 TBS chopped fresh garlic 
1 TBS chopped lemongrass 
Mix marinade together and evenly brush on salmon.  Let fish marinade in the fridge for 30 min. 
Preheat oven 350 degrees. Heat oven safe pan with oil.  Once oil is heated place salmon skin side down until it’s seared.  Flip to over skin side up and sear.  Once both sides are seared, take off heat and put in the oven about 15-20 min depending on the thickness of the filet. .
Scallion oil: 
4 tablespoons flavorless oil (vegetable oil) 
1/2 cup chopped scallions 
Pinch of salt .
Fried Shallots:
2-3 large shallots (thinly sliced)
1/2 cup oil 
Fry until golden and then transfer on a paper towel to absorb oil. .
When fish is done, pour on scallion oil and sprinkle generously with fried shallot. Wrap with rice paper and veggies or eat with rice.
