Vietnamese Style Grilled Mussels

Vietnamese Style Mussels by No Limit Cooking

Ingredients:
1 pound of mussels, half-shelled and cleaned
4 ounces roasted unsalted peanuts
1/4 cup scallion oil
1/4 cup fried shallots
1/2 cup Cham Dipping Sauce

Steps:

Prepare Oven – Preheat the oven to 425-degrees.

Grill Mussels – Add 1/2 teaspoon of scallion oil on each mussel.  Bake mussels for 5-7 minutes in a 425-degree oven or until juices start bubbling.  Remove mussels and put them on a plate. Sprinkle on crushed peanuts and fried shallots and put a little bit of the Cham Dipping Sauce on top of each mussel.
