Vietnamese Green Mango Salad with Shrimp (Gỏi Xoài)
Mango Salad Recipe:
1 unripened green mango (Xoài Xanh)
1/2 red onion (Hành Tím)
1 bunch Vietnamese Coriander (Rau Răm) or any herb that you like
Cham Dipping Sauce/Dressing:
Lime juice, Son fish sauce (anchovies, sea salt), water, sugar, Thai chili peppers, garlic, and cilantro.
Mix all ingredients. Add dressing to taste
Shrimp Recipe:
1lb shrimp
1 tsp kosher salt
1 tsp pepper
4 tsp of corn starch
Devine shrimp and toss all dry ingredients together with shrimp and mix well. Brush over a light coat of cooking oil or use cooking spray.
Air fry at 400 degrees for 5 minutes on each side. (Cooking time varies on your air fryer)
Optional Toppings:
Deep fried shallots
Roasted peanuts (crushed)
Shrimp chips
